Preheat oven to 400°F.
Prep all ingredients: mince garlic, chop herbs, grate the onion and cucumber, etc - most ingredients overlap across the components, so prepping everything at once saves time.
Cut the potatoes into wedges and pat dry with a paper towel.
Mix together the lemon juice, broth, olive oil, oregano, garlic, parsley, salt, and pepper for the potatoes.
Add the potatoes to a large baking dish, pour the mixture over, and mix to coat.
Roast for 25 minutes.
Toss the potatoes and roast for another 20 minutes, or until soft.
Combine the meatball ingredients in a bowl and mix together.
Once the potatoes have about 20 minutes left, scoop and roll the meatball mixture into balls and place on a lined baking sheet.
Spray the meatballs with a little olive oil and add to the oven alongside the potatoes.
Bake for 20 minutes.
Broil for a few minutes at the end so the meatballs get crisp.
While everything bakes, mix together the tzatziki ingredients.
Prep the Greek salad and dressing.
Assemble plates with the meatballs, potatoes, salad, and tzatziki. Top with extra fresh herbs and olive oil. ENJOY !!!
